Ingredients

  • Olive oil - 1 Tbsp
  • Small onion, diced - 1/2
  • Garlic, crushed - 1 clove
  • Whole tomatoes, small can - 1
  • Parsley, minced - 1 Tbsp
  • Sailor's Choice Prawn, shelled, deveined, and peeled - 8
  • Feta, crumbled - 1/4 cup
  • Pasta - for 2

Instructions

  1. Preheat your oven to 400F.
  2. Put a pot of water on to boil for the pasta.
  3. In a small oven proof skillet sweat the onion in olive oil until translucent.
  4. Add garlic and continue cooking for another minute.
  5. Roughly chop the tomatoes then add along with their juices and the parsley.
  6. Simmer for 15 minutes or until thickened.
  7. Stir in prawns and sprinkle the feta on top. Transfer to the oven.
  8. Bake until prawns are cooked and the feta is melted, it should take about 12 minutes.
  9. In the meantime add 2 tablespoons of salt to your water pot and cook your pasta.
  10. Taste the sauce and add salt and pepper as necessary; then toss with the pasta.
