Ingredients

  • Prawns (frozen) - 225g
  • Frozen peas - 1/2 cup (100g)
  • Coconut milk (1/2 400ml can)
  • Coconut oil (or any oil) - 1 tbsp
  • Onion, chopped - 1 medium
  • Garlic cloves, minced - 1-2
  • Paprika - 1 tsp
  • Cumin - 1 tsp
  • Turmeric - 1 tsp
  • Garam masala - 1 tsp
  • Coriander - 1 tsp
  • Mustard seeds (optional) - 1 tsp
  • Cumin seeds (optional) - 1 tsp
  • Lemon (juice only) - 1
  • Salt and pepper to taste
  • Fresh parsley, finely chopped - handful

Instructions

For the lemon oil

  1. In a frying pan, sauté the onions over medium heat for about 5 minutes or until they become transparent.
  2. Add the spices and garlic and cook for a further 1 minute.
  3. Add the prawns and lemon juice. Stir to coat them with the spices, then pour in the coconut milk.
  4. Add the peas and season with salt and pepper to taste.
  5. Cover and leave to simmer for 5-10 minutes.
  6. Mix in the chopped parsley just before serving.
